Smoked Salmon Delicatessen Style

For The Love Of Salmon
We always have fun in our household when trying to get the smaller children to eat new foods or foods they seldom eat. As a parent and grandparent I am always influencing my family to choose and enjoy whole grains, beans, fruits, vegetables and fish because we gain much of our vitamins and minerals from these healthy foods. A couple of days ago we offered two granddaughters a family snack of smoked salmon and they made terrible faces and said "no" many times and in many ways. We ooooh'd and awww'd and mmmmm'd every time we took a bite and the 3 1/2 year old finally made the major life decision to try it (never worked on the 1 1/2 year old). She was chewing away when I looked at her, she smiled at me and with small pieces of salmon on her lips and a couple of soft smacking noises she said "Grandma that is good". Since I already had this smoked salmon recipe sitting near the computer I decided to share it in a Hub, with the addition of a spinach salad. Smoked salmon is rich and flaky with a hearty smooth flavor. As adults who love fish, smoked salmon in particular, we know that it's just plain delicious. It took us awhile to convince my three year old granddaughter how wonderful smoked salmon is and now she loves it.

Smoked Salmon Rolls
- 6 ounces smoked salmon, thinly sliced
- 4 6-inch whole wheat tortillas
- 1/2 cup cream cheese, softened
- 4 teaspoons Dijon style mustard
- 4 scallions, minced
- 1/2 teaspoon dried dill
Place the tortillas on a flat work surface and spread each with 2 tablespoons of the cream cheese and 1 teaspoon of the mustard. Sprinkle with scallions and dill; then top with an even layer of salmon. Gently roll up the layered tortillas nice and firm. Slice each roll diagonally in the center.
Spinach Salad
- 1 10-ounce bag washed baby spinach
- 1/4 cup capers, rinsed and drained
- 4 very thin slices red onion
- 2 tablespoons fresh lemon juice
- 1 teaspoon olive oil
- salt
- freshly ground pepper
Mix together with a whisk the lemon juice and oil in a medium salad bowl. Add the spinach, onion, and capers. Toss salad to coat then add salt and pepper to taste and serve immediately.

Sounds delicious -- I love to fry salmon in rosemary butter.... simmer the rosemary in a pan with butter until the flavor of the herb is in the butter... I'm gonna try this... yummie
